
Quick and Easy One Pot Stew
This is an easy one pot meal that can be done either on a campfire or on a camp stove. This is our favorite stew and we have shared this meal with fellow campers on the beaches of Baja Mexico. Great food can make an epic Baja camping adventure even better!
Yield 4 servings
Basic Ingredients
1 lb. lean ground buffalo, beef or turkey
1 medium onion
4 medium potatoes - white, yellow or red
2 carrots
1 tsp olive oil
1/2 tsp seasoned salt
1/8 tsp pepper (optional)
Optional Ingredients
Frozen corn, peas, green beans, lima beans. It’s ok to add what you want. Be creative!
One Pot Method
Slice onions, potatoes and carrots to 1/4" or use a mandoline slicer set to 1/4". In a pot, add 1 tsp cooking oil or olive oil to the bottom of the pot, then layer in this order - Onions, ground meat, carrots then potatoes. Break up the ground meat and spread across the onions and add half the seasoning, then layer the carrots, potatoes and the rest of the seasoning. Put a lid on the pot and simmer for 30 minutes. Check the potatoes and carrots for doneness. Mix together and serve. Add your own additional seasoning to taste.
Foil Method
As a former Cubmaster and Scoutmaster, raising two boys, we would make the foil packets on every outing. It’s a fun for meal for everyone. This method is great and teaches each camper how to make their own meal.
Use two sheets of heavy-duty foil for each packet. Divide ingredients into four. Spray the foil and layer the ingredients the same way as the pot method above. Once everything is in the packet, seal it up by crimping the top and edges of the foil together. Place the foil packet on the campfire coals and allow it to cook for about 15-20 minutes. Use extra-long tongs to flip over half way then when the packet is done, carefully remove it from the fire and enjoy your delicious campfire meal!
